Job details:

• Ensure adherence to written standards
• Instill safety and sanitation awareness and practices
• Conduct thorough opening and closing checks of the Kitchen
• Participate actively during operations to co-ordinate Food production
• Assume complete responsibility for Food cost
• Establish par levels for Food, order products and manage inventory levels and costs
• Establish daily prep levels, product freshness, portion control and proper food handling and storage procedures
• Assume complete responsibility for Kitchen labor costs
• Assume complete responsibility for the training and proficiency of the Kitchen staff
• Work with General Manger in the areas of recruitment, interviewing, staff hiring and addressing discipline issues
• Provide guidance, coaching and conduct on-going formal performance reviews of the Kitchen staff
• Schedule and conduct periodic informational and training meetings for Kitchen staff
• Oversee and manage controllable operating costs in the Kitchen
• Develop and post daily, weekly and monthly cleaning schedules and monitor the work performed
• Develop and implement daily specials program, seasonal specials and promotions

• High school diploma
• Minimum 3 years kitchen experience
• Management/Supervisory experience
• Food Safe certification
